Cranberry sauce is something I look forward to preparing and eating every year at Thanksgiving! Our family always made it from scratch and I might be biased but ours is pretty darn good. If your table is like most of those celebrating, you will probably have some form of this tangy sauce on your table… which means you will probably have a bunch leftover!

So if you don’t want to make the dreaded day-after-Thanksgiving-sandwich shmeared with cranberry sauce… here’s a healthy and fun way to use up the remaining sauce! When Chobani approached me to participate in their #madewithChobani series for Thanksgiving, I was inspired to add yogurt (I used Chobani Non-Fat Plain Greek Yogurt) , more orange juice and some sugar to make this beautiful homemade Cranberry Frozen Yogurt the next day. Layer them for a stunning visual design or just pour them straight in if you can’t wait! In case you’re wondering, I used these popsicle molds from Amazon which worked very well – they even came with a package of wooden sticks!

3 Ingredient Cranberry Sauce, easy and delicious
Now for the good stuff… here’s my favorite recipe for Thanksgiving Cranberry Sauce – we’ve made this basic (3 ingredient!) recipe for years in our family. It’s super simple and can be prepared ahead of time and stored in the fridge. I love my cranberry sauce on the tart side and it’s absolutely necessary to have a little dash of it with each bite of turkey, stuffing and of course mashed potatoes. The orange juice and zest balance out the tartness of the cranberry – plus, look at that color! It’s like a jewel you can eat.
As an aside, I don’t know why cranberry sauce isn’t consumedoutside of the holidays – because it’s so delicious! Stay tuned, I may have a solution for you 😉
Cranberry Sauce - the perfect sauce to bring your Thanksgiving plate to the next level. Tart, sweet, tangy and ready in under 30 minutes - this make ahead sauce will become a staple on your table!
Ingredients
1 12-ounce package of cranberries
¾ cup of sugar (note: I like my cranberry sauce on the tart side – you could always add closer to a cup of sugar if you like yours less tart)
½-1 cup of water
Zest of 1 orange (tip: zest the orange first then use the same one to juice)
Juice of 1 an orange
A dash of salt
Instructions
Rinse your cranberries in a colander and pick out any mushy or unripe ones.
Combine all the ingredients along with ½ cup water.
Bring to a boil over medium-high heat and stir while sugar dissolves.
Reduce heat to a simmer and add water if necessary.
Simmer for an additional 15-20 minutes until the cranberries all burst and the sauce is a bit thick.
The sauce will thicken up significantly when cooling so remove when it's somewhere between a soupy and stewy consistency.
If you prepared it early, you can warm it up and add a bit of water to achieve the desired texture.

Baked Apples Streusel
As the leaves fall from the tress and the wind whips at our cheeks, there is nothing more comforting than the scent of something baking in the oven – especially when it’s apples and cinnamon.
Healthy and vegetarian, this recipe for Baked Apples Streusel is the perfect breakfast for a cold morning – with less than 5 minutes of prep work, let your oven do its magic and soon the scent of cinnamon and apples will fill your house. The apples are filled with a crunchy, sweet streusel topping that are the perfect compliment to a softly baked seasonal apple. Alternatively, serve these Baked Apples Streusel as a rustic dessert topped with a scoop of vanilla ice cream.
Baked Apples Streusel
Take advantage of peak apple season and buy the most beautiful apples you can find – markets are now rife with many varieties of locally grown beauties – I used a new hybrid called Jonagold for these. Play around with the streusel topping if you like – add in whatever crunchy or sweet things you have in the pantry!

Ingredients
2 medium - large apples (firmer varieties work better)
1 teaspoon cinnamon, divided
1 tablespoon butter, divided (optional, omit if you want a vegan recipe!)
4 tablespoons rolled oats
1 teaspoon sugar (brown or turbinado works great)
1 tablespoon chopped nuts (like slivered almonds)
1 tablespoon coconut flakes (optional)
1 tablespoon maple syrup or honey
Instructions
Preheat the oven to 350 F.
Core the apples by cutting the core out from the top but do not cut all the way (leave about ½-3/4 at the base of the apple)
In a small bowl, combine ½ teaspoon cinnamon and 1 teaspoon sugar.
Place the apples in a baking dish and sprinkle the cinnamon sugar mix into the inside, along with a very tiny pat of butter in each (About ¼ teaspoon). Omit the butter for a vegan recipe.
Bake for 20 minutes.
While the apples are baking, prepare the streusel topping by combining the oats, nuts, maple syrup/honey ½ teaspoon cinnamon, and ½ teaspoon of butter (or double the maple syrup). Microwave for 30 seconds and stir until combined.
Once the apples have baked for 20 minutes, open the oven and spoon the streusel mixture into the center of each apple.
Bake for an additional 15-20 minutes until the apples are soft and the topping is crunchy.
Remove from the oven and enjoy - serve with a scoop of vanilla ice cream if desired!
