Light, juicy and crunchy this citrus salad is the perfect side dish for the middle of Winter. Vegan and under 150 calories per serving!
Hello February… yep, we’re in that ‘shitty middle’ (pardon my French) of Winter when the snow is no longer a wonderland but clumps of grey mush and your hands don’t even absorb lotion anymore they’re so dry. But there’s one shining light of this time of year…. the amazing array of citrus available! From Cara Cara oranges, to grapefruits to my newest discovery… strawberry clementines. There is no better way to brighten up a dreary winter day – and get a nice dose of vitamins – than this Winter Citrus Salad!
The smack dab middle of Winter just begs for some color – I try to wear bright colors as much as possible this time of year. Because what’s worse than feeling drab than walking through a sea of black, grey and navy coats?! This Citrus Salad brings the same pop of bright juiciness to your plate that an orange or pink shirt will. So I dare ya, wear some bright colors tomorrow π
OK back to the Citrus Salad – the more variety of citrus fruits you can find, the more colorful and dynamic the salad will be. The almonds add a *crunch crunch crunch* (not to mention a bit of protein) while the honey sets off the tartness of the fruit with a bit of sweet. Top of all off with a touch of flake salt and you’re good to go!

- Serving size: ⅓ recipe

- 1 large grapefruit
- 2 medium sized oranges (Cara Cara or Blood oranges)
- 3 small citrus fruits like strawberry clementines or tangerines
- ⅛ cup of almond slivers
- 1 tablespoon honey
- ⅛ teaspoon flake salt (like Maldon Sea Salt Flakes)
- Peel all the fruits and remove as much of the pith as possible with a sharp paring knife.
- Using a serrated knife, slice the fruits (in a cross-section fashion) in cuts ½ inch thick.
- Arrange the slices on a plate - mix up the different colors for variety!
- Sprinkle with the almonds, drizzle the honey and lastly add the salt.
- Serve and enjoy!

I think this would be among the most elegant desserts anyone could serve! I know your intention was salad, salad for dessert is a great idea! We often make citrus salad that looks similar to this, but is dressed with all of oil and oil cured Moroccan olives. I love the idea of the honey!

This is such a beautiful, healthy, and spirit lifting colorful salad π I really do like it so much. Although I do not like blood orange – and I have no idea why ?? I’m guessing the name- I can for sure relate to all the other ingredients. Pinned.
