Is a rose a rose by any other name? Is a delicious salad still delicious whether you call it a Salad Shirazi, Israeli Salad or Choban Salad? Yes, yes and yes! Welcome, Salad Shirazi or Shirazi Salad. It’s such an easy salad yet also a staple of Persian and Middle Eastern cuisine. Cucumbers, tomatoes and onions mellow out in a tangy dressing of lime and olive oil for a fresh salad which is as beautiful as it is healthy and tasty!
It pretty much can be served with any meal – from kabob, to khoresht to kuku sabzi or whatever your heart desires! It’s perfect to balance out a heavy dish of rice or even for a light meal on warmer days. You could make the dressing with lemon as well but I prefer limes since they’re tangier and never have seeds. π
Basically all you need to do to prepare this delicious salad is chop chop chop then dice dice dice the sh*t out of these veggies! Then you just toss with the simplest dressing ever and let everything mellow out for a few minutes… and voila! Your vegan, vegetarian, gluten free, rainbow salad is ready!
Pro tip: The dressing / juice left when you finish the salad is pretty much worth its weight in gold. Make sure to not let it go to waste by sopping it up with some bread, pouring it over your rice or simply drinking it if you feel adventurous π

- 4-6 Persian cucumbers
- 3-4 medium tomatoes
- 1 medium red onion
- 2 limes
- 1 tablespoon olive oil
- ⅛ teaspoon salt (1 pinch)
- ⅛ teaspoon pepper (1 pinch)
- Dice the cucumbers, tomatoes and onions. Get them fairly small and as uniform a size as possible.
- Put the diced veggies in a bowl and add the juice of the limes, the olive oil and salt and pepper.
- Mix the salad until combine.
- Taste and adjust seasonings if necessary.
- Serve immediately or let sit to allow flavors to meld - 20 to 30 minutes should suffice!

Such a beautiful clean and crisp salad. I make a similar salad but always add couscous, never thought to enjoy just the veggies. Love it!
