Kale is everywhere these days…. even in this Lemony Kale Hummus! But I have kale-confession to make before we get started… I resisted the kale movement for a long time – I don’t like giving in to food trends but I’m realizing foods can become trendy because they’re actually good. Shocker!
Turns out, kale is not only delicious and healthy – it’s super versatile (soup! chips! salad! pesto! meat substitute! just kidding on the last one.). Crunchy, tasty and packed with vitamin C, omega-3 fatty acids (the ones that make you smart) and a bunch of other key nutrients, it really should be on your list of favorite cruciferous veggies! Not only does it taste great when paired with lemon, but apparently the acid content in lemon juice activates the iron in the kale even more! So kale will make you smarter, healthier and tastes good? This is one food trend I can get on board with!
The bite of the lemon and the earthiness of the kale set against the creamy background of the garlic, chickpea and tahini works magically together – I think you’ll love this spin on the classic hummus we all know and love! So grab some pita chips and get to dippin’!
- 1 can (15 oz) chickpeas, drained (also known as garbanzo beans)
- 1 cup kale - washed and chopped in strips
- 3 lemons
- 1½ tablespoons tahini
- ½ teaspoon garlic powder
- Salt & Pepper to taste (you can start with ½ tablespoon salt, and ½ teaspoon pepper)
- Before measuring the tahini, give it a good mix - it tends to separate out.
- Pulse the tahini and the juice of lemons in a food processor for 5 seconds.
- Drain the water from the chickpeas and add them to the food processor.
- Add the garlic powder, salt and pepper and pulse for 20-30 seconds until there are no whole chickpeas.
- Add the kale to the food processor and pulse until it reaches the desired consistency. (I like mine ever so slightly chunky, where you can see bits of what's inside).
- Taste and adjust seasonings if needed.
Can you substitute Kale for Arrowroot because I’m allergic to Kale? hahahhahahaha This looks great! I love adding super powers to delicious foods.
No, but try raspberry yogurt mixed with buttermilk! Hahahaha!

Ahu joon, I used to look at Kale as a medicine and would just get it for juicing, but this is a good twist on getting my medicine in 😉

Dear Ahu, what a fabulous idea adding kale to a lemony hummus – I do not believe I have ever seen kale being added to hummus – what an intriguing idea for a recipe. Your hummus has a wonderful green color and it must be delicious as a dip with all those abundantly available fall veg!

Yum! And you know the only thing I will leave out is the garlic powder! (Even when I could eat garlic, I didn’t like garlic powder… quirky I was as a youth…) I love all the health benefits of this hummus! This weekend. Farmers market. Kale. Me.
