Healthy and vegetarian, this recipe for Baked Apples Streusel is the perfect breakfast for a cold morning – with less than 5 minutes of prep work, let your oven do its magic and soon the scent of cinnamon and apples will fill your house. The apples are filled with a crunchy, sweet streusel topping that are the perfect compliment to a softly baked seasonal apple. Alternatively, serve these Baked Apples Streusel as a rustic dessert topped with a scoop of vanilla ice cream.

Take advantage of peak apple season and buy the most beautiful apples you can find – markets are now rife with many varieties of locally grown beauties – I used a new hybrid called Jonagold for these. Play around with the streusel topping if you like – add in whatever crunchy or sweet things you have in the pantry!

Apples baked with a lovely streusel topping of oats, almonds, cinnamon and maple syrup. Bring the scent of Fall into your kitchen with this easy vegetarian breakfast dish!
Ingredients
  • 2 medium - large apples (firmer varieties work better)
  • 1 teaspoon cinnamon, divided
  • 1 tablespoon butter, divided (optional, omit if you want a vegan recipe!)
  • 4 tablespoons rolled oats
  • 1 teaspoon sugar (brown or turbinado works great)
  • 1 tablespoon chopped nuts (like slivered almonds)
  • 1 tablespoon coconut flakes (optional)
  • 1 tablespoon maple syrup or honey
Instructions
  1. Preheat the oven to 350 F.
  2. Core the apples by cutting the core out from the top but do not cut all the way (leave about ½-3/4 at the base of the apple)
  3. In a small bowl, combine ½ teaspoon cinnamon and 1 teaspoon sugar.
  4. Place the apples in a baking dish and sprinkle the cinnamon sugar mix into the inside, along with a very tiny pat of butter in each (About ¼ teaspoon). Omit the butter for a vegan recipe.
  5. Bake for 20 minutes.
  6. While the apples are baking, prepare the streusel topping by combining the oats, nuts, maple syrup/honey ½ teaspoon cinnamon, and ½ teaspoon of butter (or double the maple syrup). Microwave for 30 seconds and stir until combined.
  7. Once the apples have baked for 20 minutes, open the oven and spoon the streusel mixture into the center of each apple.
  8. Bake for an additional 15-20 minutes until the apples are soft and the topping is crunchy.
  9. Remove from the oven and enjoy - serve with a scoop of vanilla ice cream if desired!

    I love baked or cooked apples better than I do raw/fresh. The concentration of the flavor and sweetness is very pleasing. What a treat at a breakfast table! 🙂

    These look great, Ahu! I love baked apples, and the streusel topping is wonderful. I like the breakfast consideration; can that include the vanilla ice cream, too?
